About us

What is a Rocoto?

Our goal is to help spread the flavor and culture of Peru through our unique menu and restaurant atmosphere – The three colors found in our logo represent the three regions of Peru: Blue represents the coastal region, rich in seafood and oceanic tastes. Red represents the highlands, home to Peru’s most famous cultures, authentic cuisine, and spectacular scenery. Lastly, the Green represents the bountiful Peruvian jungle, most famously known for its Amazonian levels of biodiversity.

In time we hope to elevate the public’s opinion of Peruvian Chifa Cuisine to prove it is on the same level as other more widely accepted cuisines like French, Japanese, and Italian!

Our history

While hailing from Le Cordon Bleu in Los Angeles California, a world-renowned culinary school, Jorge can trace his humble beginnings as an immigrant from Peru chasing the American Dream. Chef Jorge Chan won the Sabor de Las Americas (Taste of the Americas) award 3 years in a row, rising to the top of the American Latin Food world.

Every recipe used in El Rocoto is perfected through years of observation and experimentation, Jorge spent his early days watching and learning his peruvian-chinese parents cook and prepare traditional Peruvian dishes. Once in the United States, Chef Chan read up on various Peruvian and Chinese cookbooks during his free time and observing how his American co-workers worked in the kitchen. Eventually Chef Chan earned his Culinary, Bakery, and Pastry Arts Degree from the le Cordon Bleu in Los Angeles, cementing his place in the culinary world and began to make his mark in California. Combining his traditional roots with modern restaurant practices learned from both the working world and academic, Chef Jorge W. Chan brings a unique, authentic Peruvian flavor you can’t find anywhere else.
